While the iced matcha latte is smooth and creamy, the matcha tonic is more vibrant.
It's another way to enjoy matcha without milk, without heaviness, with immediate freshness.
Minimalist in its composition and surprising in its balance.
What you need

1 tsp of matcha powder (ideally KAZAN ceremonial matcha from the Kiji brand )

60 ml of hot water (75–80°C, never boiling)

150 ml of very cold tonic water

ice
Optional twist:

lemon zest
-
a few drops of lemon juice

1 tsp of ginger or citrus syrup
The steps

Place the matcha in a bowl or a small glass.

Add the hot water.

Whisk for 15–20 seconds until smooth and homogeneous texture.

Fill a large glass with ice cubes.

Pour the tonic water.

Gently add the whipped matcha on top.
The visual contrast between the green of the matcha and the transparency of the tonic should be subtle, but very clean.
The aromatic twist (if you add it)
Matcha tonic works particularly well with a fresh or slightly spicy note.
You can add any optional ingredients you like! The idea is not to sweeten the drink excessively, but to add a nuance.

Important detail
As with all matcha preparations, avoid boiling water . Too high a temperature accentuates the bitterness and unbalances the drink.
